Chicken Stir-Fry

Chicken stir-fry is a quick and versatile dish that's perfect for busy weeknights. Here's a simple recipe to make chicken stir-fry:

Ingredients:

1 lb (about 450g) boneless, skinless chicken breasts or thighs, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

2 cloves garlic, minced

1 tablespoon ginger, minced

1 onion, thinly sliced

1 bell pepper, thinly sliced

2 cups mixed vegetables (such as broccoli florets, snap peas, carrots, and mushrooms)

Salt and pepper, to taste

Cooked rice or noodles, for serving

Instructions:

In a bowl, combine the sliced chicken with soy sauce, oyster sauce, hoisin sauce, and cornstarch. Mix well to coat the chicken evenly. Let it marinate for about 15-20 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken to the skillet and stir-fry for 5-6 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds, until fragrant.

Add the sliced onion and bell pepper to the skillet, and stir-fry for 2-3 minutes, until they begin to soften.

Add the mixed vegetables to the skillet and continue to stir-fry for another 3-4 minutes, or until all the vegetables are tender-crisp.

Return the cooked chicken to the skillet, and toss everything together until well combined. Season with salt and pepper to taste.

Serve the chicken stir-fry hot over cooked rice or noodles.

Optional: Garnish with sliced green onions, sesame seeds, or chopped cilantro before serving for extra flavor and presentation.

Enjoy your homemade chicken stir-fry! Feel free to customize the vegetables and sauces according to your preference.
